I had a look at the on-line manual (tags, keywords, metadata) but could not find an answer. This is what I am trying to do. I have several databases and each has its own sorting requirements. However, these requirements do not involve any of the standard metadata fields, so I need to create new fields which I can then use later to sort the database (hierarchically > i.e. on more than one custom field). Can this be done and if so, how would I go about it?

I suggest you look at Attributes.
This awesome feature allows you to store any amount of data for any file in your database. You can use Attributes for sorting and many other purposes, too.

A big "Thank you". I was obviously lookjing in the wrong place (I used iMatch many many years ago and then moved to MacOS and LR. I did seem to remember it could be done but had forgotten how).

Am I right in thinking that attributes are only saved in the database?

Yes. For all else there is standard metadata.
