Excluding Files By Words (File Names & Metadata)

In Version 3.6, I made use of selections that permitted, in the filename, the use of the - (to exclude) and the + (to include).  Version 5 only includes OR and AND operators.  I tried to exclude by creating a new filter that would invert the result.  What seems tacky is that the filters can only be edited by saving to that filter once again, you can't open up and modify that filter.  The problem here is that I can only exclude words by making that the very first step in the workflow because the filter pane only allows one instance at a time, and that's not very flexible.  What's the best approach to the workflow I want here?
