I apologize for such a basic question (I did try the help system):

How are date and time formats changed? For example from M/D/Y to D/M/Y, etc.

This depends a bit on where you are looking at date and time information in IMatch (e.g., file window, metadata panel, ...)

IMatch by default uses the date and time format configured for the logged in user (Windows Control Panel).

Date and time information in the Metadata Panel is formatted in the native ExifTool format, which is the standard ISO date/time format (YYYY-MM-DD HH:MM:SS.s100 +/- HH:MM).

When you output date/time information via variables, you can change the format using a format: function in the variable.
