How do I find all photos in a folder with ISO greater than 800
I've created a new category with the formula "IMatch Standard Categories|Image Files|ISO|800" AND "@Keywords|China"
Also tried the Builder but can not see how to create greater than or less than.

Category formulas don't support mathematical operations.
You could just use the automatically created ISO category under IMatch Standard Categories > Images in the Category View. Just select all categories including 800 ISO, like this:

You can to the same using the category filter in the Filter Panel.
Or, use a value filter in the filer panel and filter for ISO:
