My Universal Catalog is the start of my category tree. So how can I create some categories like these?

This is the way that I see to do my categories. Would some body take a look at this and see if this is right.
Use the "New Categories..." command in the Category View or Category Panel.
When you right-click "Universal Catalog" and then use this command, you can enter
What|Animals & Pets
What|Arts & Architecture
and IMatch creates the What and the other levels automatically.
Note: It is unclear why you do that. Do you want to manually re-create the old Universal Catalog categories used by IMatch 3?
Of so, you can import the old IMatch 3 Universal Catalog from the attached IMCS category schema.
Download it to your PC and Unzip.
Then use the Category Import in the Import & Export panel to import the schema into your database.

I have looked and looked and I cannot see a "New Categories..." command.
Carl first select the category you want to create a new child category for then simply press the INSERT key on your keyboard.
Or with your mouse right click the category and choose the create new category command you want.
Yep.
Right-click the category you want to use as a parent for the new categories to open the menu. Same thing as everywhere in IMatch. Right-clicking brings up the context menu for the clicked object, with all commands available for it.
